A High-Altitude and Characterful Terroir
Our Villalonga olive trees do not grow just anywhere. They are planted in stony, calcareous soils, surrounded by an ecosystem of pines, rosemary, and thyme. This mountain dryland environment subjects the tree to moderate water stress, forcing the fruit to concentrate more polyphenols and antioxidants, resulting in an oil with superior structure and stability compared to lowland areas.
The Villalonga is not just an olive; it is a tree with a very distinct personality that adapts perfectly to the Mediterranean climate.
The Tree: It is vigorous with an upright stature. It has a dense canopy and a remarkable ability to adapt to calcareous soils. Although resistant to cold, its “weak point” is sensitivity to extreme drought, so it benefits from the sea breeze and a moderate rainfall regime.
The Leaf: Usually elliptic-lanceolate in shape, with a very characteristic grayish-green color.
The Fruit: Medium to large in size with a slightly asymmetrical, ovoid shape. It ripens early, usually beginning to change color (veraison) in late October or early November.
