It is the ideal variety for those seeking a subtle, sweet, and harmonious extra virgin olive oil, yet with the distinctive touch that only mountain cultivation can provide.
Morphology: The Beauty of Small Things
The Arbequina olive tree is easily recognizable by its compact appearance and the delicacy of its fruits:
The Tree: It has a weeping habit and medium vigor, with a dense canopy that adapts perfectly to our high-density plantations. Despite its delicate appearance, it shows good resistance to the cold of the Sierra.
The Leaf: Small, short, and elliptical in shape, with a very characteristic ochre-green color that sets it apart from larger native varieties.
The Fruit: It is the smallest olive among our varieties, spherical and nearly symmetrical in shape. Its early ripening allows us to harvest at the exact moment to preserve its most volatile fragrances.
