In the highest and most rugged areas of the Sierra de Enguera, where the climate becomes harsher, we find the Alfafara variety. It is the quintessential “mountain variety,” able to extract the best from a wild environment to offer an oil of unmatched intensity and robustness, designed for those seeking a profound sensory experience.
RESILIENCE AND ALTITUDE: THE CHARACTER OF DRYLAND FARMING
Unlike other varieties, the Alfafara olive tree is highly vigorous and thrives in the cold of the Sierra and on calcareous soils.
- EXTREME ADAPTATION: It is our variety most resistant to winter frosts, allowing us to cultivate it on the highest plots in Enguera.
- NATURAL CONCENTRATION: Growing in a mountain dryland environment, the fruit ripens slowly, concentrating an exceptional amount of phenolic compounds that ensure superior structure and shelf life.
ALFAFARA VARIETY
This variety is considered the quintessential “mountain variety” thanks to its robustness in wild environments.
- THE TREE: It is a highly vigorous plant that stands out for its resistance to the severe conditions of the mountains. It is particularly well suited to limestone soils and is the variety most resistant to winter frosts in the area.
- THE LEAF: It is usually medium-sized, with a dark green upper surface and a lighter underside, typical of varieties adapted to high altitudes where solar radiation is intense.
- THE FRUIT: It has a slightly elongated, elliptical shape. Its ripening is somewhat later and more gradual than that of the Villalonga, allowing for a slower harvest to obtain different oil profiles.
